Eggxactly.
I don't despise eggs... I like omelets and an occasional scramble, but it's not a daily thing for me...
I'm not ga-ga like the Japanese about chicken embryos.

Not only does it enhance the flavor, but it nearly eliminates any parasites and similar from the salmon.
Apparently this is an old school technique... And not used by all sushi chefs, particularly those who use farmed salmon as opposed to the more flavorful wild salmon that some chefs (like mine) uses.
Learned something new... |
Your guy uses wild salmon. That is pretty rare. Tastes waaay better.

That's awesome. It has more omega-3's too, less heavy metals, and tastes better.
Great taste. Less filling.

Yeah it's an Italian restaurant that serves traditional dishes family style. Haven't been there in a long time. It's a chain restaurant.

When I saw it on TV, they showed the cooks actually spreading lard on the buns to dress the bread before assembling the burger.

Heck at least most mayo's have the benefit of having some omega-3 fatty acids...but pure animal fat (i.e. lard) that is so wrong, I shuddered when I saw it.

My brother works at a rendering facility and he told me that all of the fast food chains used to fry their french fries using beef fat (lard) because it gave the fries more flavor...

I worked there a couple of summers when I was in school... Some of the things you find out could drive you to become a vegetarian.
And the facility was along Bandini Road...... Yeah, that Bandini.
