While having lunch at my fave sushi bar, I found out (from the waitress, the owner/chef's daughter) that they "cure" their salmon with a (secret) solution of salt and vinegar... Not only does it enhance the flavor, but it nearly eliminates any parasites and similar from the salmon.

Apparently this is an old school technique... And not used by all sushi chefs, particularly those who use farmed salmon as opposed to the more flavorful wild salmon that some chefs (like mine) uses.

Your guy uses wild salmon. That is pretty rare. Tastes waaay better.

Yeah it's an Italian restaurant that serves traditional dishes family style. Haven't been there in a long time. It's a chain restaurant.

Heck at least most mayo's have the benefit of having some omega-3 fatty acids...but pure animal fat (i.e. lard) that is so wrong, I shuddered when I saw it.

My brother works at a rendering facility and he told me that all of the fast food chains used to fry their french fries using beef fat (lard) because it gave the fries more flavor... Shocked Sweat
